This is a set of grilled cheese recipes compiled from member submissions from our 2015 grilled cheese meeting.

Cambozola Black Label Cheese (Venissimo)
Dietz & Watson Balck Forest Bratwurst – Grilled and Sliced Thin (Sprouts)
Sauerkraut (Homemade)
Sweet Hot Beer Mustard (Homemade)
100% Whole Wheat Bread NOTE: Would be better with Rye or Pumpernickel – (Sprouts)
Special Sea Salt Whipped Butter (See Recipe Below)

Unsalted Butter Softened
Alder and Applewood Smoked Sea Salt (Salt Farm)
Havana Spice Sea Salt (Salt Farm)
Whip together with a fork until very salty and robust.
Cover and Refrigerate until using.


Sushi Grilled Cheese

A California Roll in grilled sandwich form.

White Rice Bread (sprouts)
Wasabi and Sesame Cream Cheese (homemade)
– 4 oz cream cheese with wasabi, sesame oil, and sesame seeds to taste
Surimi (Imitation Crab Meat)
Avocado
Cucumber
Pickled Ginger
Nori
Butter or sesame oil


Grilled Cheese with Cauliflower “Bread”

An experiment in low carb grilled cheese. Gluten free.

Cauliflower Bread (cauliflower, egg, brown rice flour, mozzarella, parmesan)
– Steam cauliflower and process in food processor, mix in an egg, rice flour, and cheeses. Form into bread-shaped rectangles on a parchment lined pan and bake at 450 until lightly browned, about 30 mins.

Bananas Foster Grilled Cheese

A classic dessert re-envisioned in grilled sandwich form.

Bananas caramelized with brown sugar and butter and flambeed with rum
– melt a stick of butter and add ½ cup brown sugar and a pinch of cinnamon
– add 4 bananas, cut in half lengthwise and then slice into strips
– cook until sugar starts to caramelize
– add ¼ cup dark rum and ignite, watch your hair and eyebrows
– allow alcohol to burn off and cook for a few more minutes

No, Haloumi never melts.

Rhubarb Relish (From May 2015 Sunset Magazine):
3 Tablespoons Apple Cider Vinegar
1/3 cup brown sugar
1 teaspoon cinnamon powder
pinch dry chili pepper
1/2 teaspoon mustard seed
Zest of two limes
2 cups rhubarb in 1/2 inch slices
1 teaspoon dry mustard
dash of cracked black pepper
