Queso Diego November Meeting Announcement

Happy November Cheesers!

We have some exciting news for our November general meeting! This month we’ll feature 1st Place San Diego County Fair Cheese making Competition Winner, Peter Zien. Peter Zien is the owner of Medal-Winning SD Brewery AleSmith, and is moving towards running a local creamery aptly named CheeseSmith. His topic, “Beer-Washed Cheese and Belgian Ales”

Comes learn about beer washed cheeses. Peter will be bringing some very special beer-washed Cheeses and pairing them with Belgian Ales. He has mail-ordered some unique cheeses from Rodenbach, Chimay, and a German Creamery. Also, a new washed-rind cheese from Minnesota that is coated 3x with Surly Furious. He’ll be pairing these with some AleSmith and other Belgian-style brewery offerings.

Queso Diego August Meeting Announcement

Think beyond the blue box and Velveeta! The August Cheeseup will feature our beloved Mac n’ Cheese, the ultimate in comfort food! What’s better than a steaming hot bowl of pasta with melty #cheese to make you swoon? Whether topped with breadcrumbs or studded with lobster, decadent, healthy, or somewhere in between, come out to enjoy this timeless classic and explore this fascinating facet of cheese! Our meeting is set for next Tuesday, August 19th, and it’s going to be glorious!

Please note: We will not be preparing recipes on site! Instead, we kindly ask that you bring your ready-made Mac n’ Cheese recipes to the meeting. We highly encourage crock pots or alternative heating devices, as on-site ovens will be available for re-heating only.

Queso Diego July Meeting Announcement

The July meeting of Queso Diego will be held on Tuesday, July 15. To start off the new membership year, we will have a presentation by Larry Stein on Cheesemaking Basics. Larry will cover a range of information from the basics of cheesemaking through more advanced topics.

This will be a presentation about cheese in general and how we turn milk into tasty goodness. We will go over some of the science behind the curds and review the various processes used in cheese making. The goal is to help you understand why you do certain things (washing curds, heating, cutting, etc.) so you can better understand what you’re doing and more easily follow the technical topics presented at meetings. We expect to provide a wealth of information for new cheesemakers, as well as some tips and technical details for more experienced cheesemakers.

Attendees are encouraged to bring any cheeses or beverages to share, and especially homemade cheeses.

In addition to the main topic, we will be presenting an intro to Mac ‘n Cheese in preparation for our August meeting.

July marks the beginning of the new membership year and we encourage everyone to renew their memberships in a timely manner. Dues will remain the same great value as previous years at $20 per person or $30 per household.

Queso Diego June Meeting Announcement

Join us for the sweet side of delicious cheese! The June meeting of Queso Diego will feature desserts made with various cheeses. We encourage all members to get creative and bring a variety of after dinner winners for some soul-satisfying yum!

Attendees are encouraged to make unique and creative cheese-based dessert creations to share. If possible, try to have them pre-portioned or pre-cut to facilitate sharing. Also consider bringing beverages to go with the desserts we will be sampling. Queso Diego May Meeting Announcement

The May meeting of Queso Diego will feature a discussion on Smoked Cheeses, led by Chris Banker. We will discuss smoking cheeses, varieties of smoked cheeses, and options for buying or making a cold smoker for smoking cheeses. We will sample a variety of commercial and homemade smoked cheeses.

Attendees are encouraged to smoke their own cheeses and/or bring smoke beers, smoked foods, scotch, and commercial smoked cheeses to share.

Greetings Cheesers!

Come out and celebrate National Grilled Cheese Month (pretty much the best month of the year for us!). Our April Grilled Cheese Up is set for this Tuesday, April 15th!

This month we’ll be celebrating National Grilled Cheese Month with our much anticipated grilled cheese meeting. We’ll be making grilled cheeses with a variety of ingredients. Please bring cheeses and unique ingredients to make delectable grilled cheese to share. The club will provide a small selection of basic breads.
