Queso Diego October Meeting Announcement

The October Queso Diego meeting will focus on soft-ripened (bloomy rind) cheeses, such as Brie, Camembert, Valencay, etc. Laurie Gerber will be giving a presentation on soft-ripened cheeses and Bix will provide some additional tips on Camembert that he learned at a course at Oregon State University.  We will also have a special guest presentation from Aurelio of Fytozimus about some new plant-derived enzymes for cheesemaking.

The September Queso Diego meeting will focus on pizza making.  We will be firing up a couple of homemade pizza ovens, making mozzarella, and designing our own pizzas using our homemade cheese and our own ingredients.  The club will be providing use of pizza ovens and dough and we will be making mozzzarella during the meeting.  If you have special dough requirements, e.g. gluten free, you should plan to provide your own dough or crust.  We request that you bring some toppings to put on the pizza from your garden or from the store.  You can also bring other commercial and homemade cheeses to use on the pizza – feta, gorgonzola, parm, etc.  We will also need some members to provide whole milk (non-ultra pasteurized) for making mozzarella.  Please fill in what you can bring on the RSVP form.

Queso Diego August Meeting Announcement

The August Queso Diego meeting will focus on Spice, Herb, Vegetable, and Fruit cheeses.  This includes any cheeses that have these ingredients integrated into the curd or as a  coating.  There are many types of relatively easy fresh or unaged cheeses that can be used as base for these ingredients, so I would like to encourage members to make some interesting cheeses this month to share.  It is even possible to use store-bought cheeses (chevre, queso fresco, etc) as a base.

Your imagination is the limit and you can use any combination of base cheese and added ingredients for these.  Feel free to make some more suggestions on the email list.  I hope to see a lot of interesting and unusual cheese at the next meeting.  Larry will also be bringing some base cheese for us to modify with our own ingredients.

For the July meeting of Queso Diego we will be focusing on judging cheeses. Peter Zien, who was one of the judges for the SD Fair Cheesemaking Contest, will be giving a presentation on judging cheeses. We will discuss how to judge cheeses, cheese style categories, and cheese judging scoresheets. We also expect to have a hands-on judging exercise as part of the meeting.

No June Meeting

Just a quick reminder that there is no regular Queso Diego meeting this month. Due to the proximity of the meeting date to the SD Fair cheesemaking awards and National Homebrewers Conference, we decided that it didn’t make sense to try to hold a meeting this month.

We will resume regular meetings on the third Tuesday of the month with our July meeting on 7/17.
