Queso Diego June Meeting Announcement

Our June meeting will be on Tuesday, June 18th. Jenny Eastwood and Larry Stein will be presenting on Tasting and Classifying Cheese. It’s better than it sounds, with emphasis on the tasting part.

As always, our friendly potluck and social time will start at 6:30. Please consider bringing an item to share, the last few months have been wonderful.

Don’t forget your chair and a light coat in case it’s cold in the brewery.

Queso Diego May Meeting Announcement

I hope you’ve all recovered from last months Grilled Cheese event. This month we have a great presentation planned. Peter Zien, of CheeseSmith and AleSmith, will be here to talk to us about pasteurization. This is a critical process in Cheesemaking and many food endeavors, but few people know what it does and why it’s important. You don’t want to miss this meeting.

As always, our friendly potluck and social time will start at 6:30. Please consider bringing an item to share. The last few months have been wonderful. Don’t forget your chair and a coat.

Thank you to everyone who responded to the Valle Guadalupe trip. It’s sold out at 30 people. I’ll be sending a notice to those that signed up with the almost final details.
Be prepared to send me your deposit after I send the notice. We have a great trip planned. I’ll send all the details to you hopefully by Monday.

Queso Diego April Meeting Announcement

April is Grilled Cheese Month and we’ll be celebrating with our annual Grilled Cheese Meeting on April 16! You won’t want to miss this delicious event!

Annual Grilled Cheese Meeting

We will be in the barrel room area that can be accessed by going down the hallway to the left of the main bar in the tasting room. We have been in this space for the last couple meetings, but were in a different location prior to that.

Please adhere to the following guidelines to accommodate our new space:

Propane / butane cooking apparatus are required, as we do not have electrical outlets available.
We need as many propane/butane stoves/grills as possible, please indicate in the RSVP if you can bring yours (with fuel included)

We will have some tables for serving and other snacks, but you should plan on trying to bring your own table for prep.
If you have a portable table, please bring it – we need as many surfaces as we can!

We ask that you bring ingredients and prep/cooking supplies to cook 2-4+ sandwiches
Cooks will be rotating, so that once you’ve finished grilling, please allow someone else to use your cooking space
Cook 2-4 sandwiches and cut into 6+ pieces each, depending on the size/structure – You won’t be slaving over the stove all night, so don’t be afraid to jump in! The smaller you can cut them, the more people will be able to sample.
Please prep beforehand as much as possible (chopping, mixing, marinating) and bring extra – caramelized onions, roasted peppers, sliced cheeses, meats, sliced fruits/veggies, spices, etc.

If you don’t plan to cook, please bring food to share or ingredients for the cooks to use
Non-members and Guests are allowed. We ask that non-members and guests consider joining. It’s only $20/year

Please RSVP below to let us know the food and supplies you can bring. We are permitted to bring homemade alcoholic beverages, but AleSmith’s license does not permit outside commercial alcohol.

Fine Microplane Grating Hard Cheese

Our March general meeting of the year will be on Tuesday, March 19th, 6:30 PM at AleSmith Brewing Company. The meeting will be in the barrel room, which can be accessed through the doors down the hallway to the left of the main bar, just past the restrooms.

The featured presentation will be Hard Cheeses by the club’s founder, Chris Banker. He will be discussing hard (firm) cheeses and how to make and age them. We will also have an introduction to grilled cheese to provide details and ideas for our April grilled cheese meeting.

As always, the meeting will start at 6:30 PM with social time and our amazing potluck filled with cheese and cheesy things brought by all of you to share. Feel free to bring something. We can have homebrew but no commercial beer or wine.

PLEASE, no sharing of food until the table cloths are on the tables at 6:30 PM. At 7:00 PM we will start the formal meeting.

Remember, the weather is a bit cool and the brewery can be chilly so bring a wrap or jacket. Also, bring a chair for maximum comfort. We don’t have access to chairs at the brewery.

Event: SD Fermentation Festival

Queso Diego will have a booth at the SD Fermentation Festival on Sunday February 17. The event is from 11-5, rain or shine.

A one-day, family-friendly outdoor festival celebrating fermented foods and beverages, local food and wellness.
