Queso Diego October Meeting Announcement

The October meeting of Queso Diego will feature a presentation by Curt Wittenberg entitled “Animals Make Milk, Microbes Make Cheese”. We will learn how bacteria, molds and yeast help us make our cheese and why understanding their roles can help us improve our cheesemaking. Along the way we will get some insight into how scientists are using cheese to understand how these microbes do their job and what that can tell us about the world around us.

Queso Diego October Meeting Announcement

Next Tuedsday’s meeting will be on Flavored Cheeses! Spice, Herb, Veggie, and Fruit Cheeses. This topic will be presented by our Presidential Nominee Frontrunner, Alyssa Humbert. It is sure to be yet another fun and educational Queso Diego meeting.

From Wheel to Plate! Join us for the October Queso Diego Cheeseup where we’ll celebrate the onset of Fall with Cheese Boards using harvest ingredients.

Using what we learned from the September meeting, all attendees are encouraged to plate their own Falltastic cheese creations! Please use your assigned harvest ingredient from our former event. If you weren’t there to receive an assignment, or have forgotten your ingredient, don’t fret! You can select a couple of harvest-themed ingredients to center a cheese spread around.

Cheese boards do not need to be large as there will be many to sample from!

Harvest Ingredient Suggestions:
– persimmons
– candied ginger
– butternut squash
– sweet potatoes
– baked apples
– pomegranate
– pumpkin
– spice
– everything nice

Queso Diego October Meeting Announcement

The October meeting of Queso Diego will take place tomorrow, October 15. We will be doing a harvest and Halloween themed pairing night and we encourage members to bring cheeses, foods, and beverages to create pairings. The club will provide a few harvest-themed cheeses and we expect that members will bring lots of interesting things to try. Feel free to bring pre-planned pairings or things to mix-and match with what other attendees bring. The idea behind this is to provide an opportunity before the holiday season for us to try out different combinations and develop ideas to share with our friends and family during the holidays.

A few ideas to get you started:
cheeses and foods involving fall and pumpkin spices, ciders and pumpkin beers and cheeses to pair with them, wine and cheese pairings, liquor or cocktail pairings, foods made with cheeses, etc.

Queso Diego October Meeting Announcement

The October Queso Diego meeting will focus on soft-ripened (bloomy rind) cheeses, such as Brie, Camembert, Valencay, etc. Laurie Gerber will be giving a presentation on soft-ripened cheeses and Bix will provide some additional tips on Camembert that he learned at a course at Oregon State University.  We will also have a special guest presentation from Aurelio of Fytozimus about some new plant-derived enzymes for cheesemaking.

The meeting’s discussion topic will focus on Blue Cheeses and will be led by John McKay. He has been doing a lot of research and preparation, and is planning to provide some commercial examples to go along with the discussion.
